When I make shrimp scampi the recipe calls for 1 cup of white wine, and everytime I use it, it comes out bitter. When I use red wine in recipes it comes out bitter also. Am I doing something wrong? Can anyone give me the name of a red, and white wine to use in recipes?
The wine is probably the wrong kind. Or there may be other ingredients causing the bitterness. Most any wine will do for cooking. Avoid the stuff the winos drink.

I always use sherry cooking wine….turns out great!

One thing you might try is to use cooking wine. Its located next to the olive oil in most stores and is a mix of the actual wine plus some additives which might help. However its no good to drink so you might not try that.
Also you might try a more aged, mature wine. It tends to have a better flavor, though more expensive.

columbia crest is always good cheap and you’ll want to drink it

I generally just use whatever inexpensive wine I can find. The two major rules of cooking with wine are: 1. Stay away…far, FAR away…from "cooking wine." It’s garbage. It’s real wine, but the manufacturer adds salt to it so people won’t drink it. I guess years ago, kids were buying cooking wine to drink, so they changed it. and 2. You should be able/willing to drink it if you’re going to cook with it! In other words, don’t buy MD 20/20 or Boones Farm to cook with.
