Thanks for your … Thanks for your complement. The Potassium Metabisulphate does not kill yeast in small concentrations. It’s meant to kill bacteria. The addition of Sorbate(seen on another video) kills yeast. Depending upon the juice kit you use, some kits require more water than others to bring it up to the 6 gallon mark. The ‘Port’ requires NO water added at all, and one batch makes 3 gallons.
Awesome video, I … Awesome video, I checked out 10 other videos, this is the best one… I just have a couple of questions; I noticed he did not rinse out the bucket after cleaning it with the Potassium Metabisulphate, doesn’t that chemical kill the yeast? My second question is, how much water do you need to add to dilute the grape juice with? What if I add none?
(I don’t mind if it turns out very strong, I love port.)
10 g. of Bentonite; … 10 g. of Bentonite; 5 g. of Potassium sorbate to kill the yeast; 4 g. of Potassium Metabisulfite to kill any bacteria. The Bentonite is a natural compound found in the earth. It’s also called a colloidal clay. It never settles in water on it’s own, but attaches itself to juice particles during fermentation to keep them from rapidly settling. It’s a fining(settling) agent in the end, when its mixed with 150 g of Chitosan or 40 g of Isinglass. Egg whites work for fining too.
I think the yeast … I think the yeast will settle to the bottom if you stir it in. Letting it rest on top gives it time to begin working before it settles completely.

Why u used bentonite in the beginning of the process while in all other professional sites and wine home making recipes describe it as a fining chemical which to be used in the final stage before bottling? Also can you mention the amount of additives u put as these kits are not available in the place i live and i have to purchase these items individually

Yes, he is using a home made kit.
If you want to start off cheap you can use quality juice, preferable 100% juice NON concentrate, with NO high fructose corn syrup.
Just search around, it’s so easy you just have to avoid contamination and as contact with oxygen. Any yeast will work but it’s best to buy wine yeast.
