    I just looked at my instructions after you mentioned NOT to remove the sediment at day 20 but my California/european/ken ridge wine kits say to REMOVE the sediment. They also say NOT to top up the fermentor with fresh water so as to have a properly balanced wine. I find after making a 23L kit you end up with just over 21.5L.

    I couldn’t agree more about the quality and price of this stuff. My kits (California Connoisseur) DO require racking before degassing. I guess it depends on the manufacture. Check out my wine making videos.
