I like grape juice and and plain seltzer water. Using the white grape juice or the purple grape juice is fun. You can even do this with apple juice. This is healthy and delicious. Pour them into your prettiest wine glasses and enjoy.

I have so many bottles of white wine I don’t know what to do with it all. My husband buys me wine all the time, but I hardly ever drink wine…I think he’s just trying to get me drunk so he can take advantage of me =) Anyways, I love to cook, so I thought I could use the wine in some of my cooking. What are some good recipes that call for white wine?

Are your wines sweet white wines (Reisling, Gewurtztraminer, etc.) or dry white wines (Chardonnay, Chenin Blanc, etc.)? Sweet wines work best for desserts, for instance making a sauce to pour over baked or poached pears (1/2 a bottle of wine; 1/2 a cup of sugar; maybe a pinch of cardommam or carraway for interest. Bring to a boil and let it reduce by about half; it will thicken as it cools.)
Dry white wines can be used quite nicely to make sauces for chicken or fish (Coq au vin generally calls for rec wine, but I’ve used white wine and it worked well.) Brown some floured boneless chicken breasts in oil in a non-stick pan (preferrably Olive oil. A few tablespoons should do.) When the chicken is done, remove it from the oil, throw in some chopped onions or sliced mushrooms, or both; pour in some white wine (carefully, as it tends to flame upif the flame is still on. The flames will go out quickly though.) Bring to a boil and reduce by about half. Sprinkle some grated swiss or jack cheese on chicken breasts, pour sauce over. Great! You can do the same for fish, but I’d probably leave out the cheese and maybe add some Lemon Pepper.

I just saw a segment on a Food Network show dedicated to a gourmet cupcake shop. One of the cupcakes had a rich Merlot icing on it, I was wondering if anyone knew any recipes for wine frosting in general. It does not have to be Merlot.

White Wine Frosting: 2 Tbsp. soft butter 2 Tbsp. white wine 1 1/2 cup

powdered sugar 3 drops Waldmeister Essence* and a drop or tow of green

coloring or 1/4 tsp. Rose extract and a drop or two of red coloring

Beat butter, wine and sugar together until smooth. Add preferred

flavoring and carefully add the coloring for a very delicate tint.

I live in TN and we have a lot of apple orchards around here and I am interested in making some wine from fresh apples and need help. (I know they aren’t in season yet)

1. What tools/items will I need.
2. Could you give me some detailed instructions on how to do it?
3. Is aging just for taste or does it up the alcohol content?

Any other info you can give me (other than any law crap) would be greatly appreciated.

PS- I do not want to make wine from apple cider!

fermenting bucket or carboy
airlock
sanitizing equipment
yeast
apples

2. Could you give me some detailed instructions on how to do it?
juice the apples and add to the fermenter
add the yeast, seal and place the airlock
in a few weeks when the airlock stops bubbling its done

3. Is aging just for taste or does it up the alcohol content?
ageing doesn’t add alcohol content, but it does 2 things: it clarifies the end product, letting the yeast and sediment settle, and it does improve the flavor. usually you want to let it age in the bottle for a few weeks.
